General Statement of Job

This is managerial work directing the Food Service Section. An employee in this position is responsible for the Walton County Jail Food Service operation from planning through meal delivery and sanitation. The Food Services Manager will ensure that the food is palatable and wholesome while controlling costs. This person will establish standards and guidelines for Food Service operations and ensure that Food Service Staff are trained to meet these standards. These guidelines will encompass Health Codes, Florida Model Jail Standards, and Florida Corrections Accreditation Commission requirements. This person will create and maintain relationships with members of the agency as well as outside vendors to facilitate optimal performance for the Food Service Section in accordance with agency needs. The Food Services Manager reports to the Jail Support Bureau Chief.


Minimum Qualifications 

  • Two years of experience in Correctional Food Service or Restaurant/Food Service Management.
  • Two years of experience purchasing food and food service supplies.
  • Demonstrable knowledge of the food and commodities market.
  • Or an equivalent combination of education and experience.
  • Must possess a valid Florida driver’s license.

  • Regular and prompt job attendance.
  • Establish and maintain a culture in the Food Service Section that aligns with the larger culture of the agency which supports communication and teamwork with all agency members.
  • Schedule Food Service Staff to ensure all shifts are covered.
  • Train Food Service Staff to supervise Inmate Workers in food service operations.
  • Ensure Food Service Staff are mindful of security concerns both in and outside of the kitchen.
  • Provide ongoing guidance and supervision to the Food Service Staff.
  • Ensure that the kitchen is a safe and sanitary environment.
  • Prepare menus that meet dietary guidelines within budgetary limits.
  • Make weekly orders of food and supplies.
  • Direct the creation of recipes and run cost analysis on the recipes.
  • Record and analyze food cost to provide budgetary information to the Support Bureau Chief.
  • Negotiate bulk purchases of frozen foods and dry goods.
  • Provide the Farm Program with any information and support needed to be successful.
  • Purchase appropriate food service equipment.
  • Arrange for the maintenance and repair of food service equipment.
  • Prepare for emergency situations and lead the Food Service Section during and after emergency conditions.

Standards to Perform Job Functions 

Physical Requirements:

  • Sit up to 6 hours per day.
  • Stand up 6 hours per day.
  • Walk up 4 hours per day.
  • Frequently lift up to 20 lbs.
  • Occasionally lift up to 50 lbs.
  • Frequently bend, reach, squat, or twist.
